Kelp Noodles in Savory Sauce

Ingrediants: | |
1 pkg. | Gold Mine Kelp Noodles |
4-5 cps | water or vegetable broth |
4-6 | shitake mushrooms, sliced |
1/4 c. | sliced scallions, greens et. al |
3 cloves | garlic |
1" sliced ginger, will be removed lated 1" piece Ohsawa Kombu seaweed | |
1 pkg | fresh tofu |
1/2 | red bell pepper, sliced |
2 tbs | Organic tamari, (San J Tamari sauce) |
1/4 c. | fresh chopped basil |
Garnish Variations: Add cilantro, chilies, lime etc. | |
Salt | |
pepper to taste |
Directions:
1) Bring water to boil and simmer noodles, mushrooms, garlic, ginger, and kombu for 10 minutes.
2) Add tofu, bell pepper, and tamari to taste.
3) Remove kombu and ginger slices--add basil
4) Serve in large bowls and garnish with scallions.
