Cauliflower Popcorn

1 head | cauliflower |
1 - 1-1/2 Tbsp | olive oil |
1 tsp | salt or Mrs. Dash |
1 - 4 Tbps nutritional yeast (optional)
Preheat oven to 400.
Trim cauliflower into small bites about size of ping pong ball or smaller. Place in a small or med size bowl.
In a large bowl combine oil & seasonings.
Add cauliflower to large bowl & gently toss to coat all pieces.
Line a baking tray with parchment paper (for easy cleanup).
Pour cauliflower onto tray.
Bake for about 1 to 1-1/2 hour, tossing every 15 min for even cooking. Cauliflower should brown & caramelize on all sides & become crispy.
