CURRY CHICKEN - Thai Curry Chicken :]>

1 tablespoon | coconut oil |
1 small | zucchini, diced |
1/2 cup | onion, diced |
1/2 cup | red pepper, diced |
2 tablespoons | green curry paste |
3/4 cup | coconut milk |
3 tablespoons | brown sugar |
1/8 cup | fish sauce |
1 pound | boneless chicken, cube |
1 | green onion, sliced |
1 cup | fresh basil |
In sauce pan heat coconut oil until hot. Add zucchini, onion and red pepper. Cook until soft, 5 min. Remove to a small bowl. Heat sauce pan and add chicken. Cook until no longer pink. Stir in coconut milk and curry paste, combined thoroughly. Add remaining ingredients and bring to a slow boil, cooking chicken for 5 min. Garnish with basil and sliced green onions.
Served with Jasmine Rice
