Chocolate French silk pie

1 c | whipping cream |
6 oz | semisweet chocolate chips |
1/3 c | butter |
1/3 c | sugar |
2 | egg yolks beaten |
3 tbsp | whipping cream |
1 baked 9" pie shell | |

1) in a heavy 2 qt saucepan, combine 1c cream, chocolate, butter, sugar. Cook over low heat stirring constantly until chocolate is melted, about 10m. Remove pan from heat.
2) gradually stir in about half the chocolate mixture into the beaten egg yolks, very slowly. Return egg mixture to saucepan. Cook over medlo heat stirring constantly till mixture is slightly thickened and almost bubbly, 3-5m. Remove from heat.
3) stir in cream. Place saucepan in bowl of ice water. Stir occasionally until mixture stiffens and becomes hard to stir (20m).
4) transfer to mixing bowl. Beat with electric mixer on medhi until light and fluffy, 2-3m.
5) Spread filling into pastry shell. Cover & chill pie 4-5h or until set. Serve within 24h.
