Beef and Spinach Meatloaf

1/3 c | olive oil |
4 garlic cloves minced 1 onion finely diced | |
1 tsp | basil |
oregano | |
thyme | |
1 tsp | red pepper, crushed hot |
2 pk 10oz | spinach, thawed |
2 lb | ground sirloin |
1 lb | sweet italian sausage |
3/4c | bread crumbs fine dry |
3 | eggs beaten |
1/3c | parmesan cheese, grated |
1.5 tsp | salt |
Heat olive oil add onion, garlic, and spices. Reduce heat to low and cook covered,about 20 minutes. Add spinach, squeezed dry and finely chopped, cook for 3 minutes. Let cool. Preheat oven 350. Combine meat and sausage, stir in spinach, breadcrumbs, eggs cheese, and salt.form meat into loaf and cook 1.5 hrs. Serve with tomato olive sauce (classic mushroom n ripe olive)
