Chilled Yellow Tomato Soup

2 lbs | yellow tomatoes, cored and rough chopped |
3/4 cup | Vidalia onions, diced small |
1/2 cup | yellow bell pepper, diced small |
2 cloves | garlic, smashed |
3 TBS | fresh lemon juice |
1/3 cup | EVOO |
Salt | |
pepper to taste | |
Garnish: | |
1/3 cup | English cucumber, diced small |
1/2 cup | cherry tomatoes, quartered |
16 cilantro leaves | |
1/4 cup | goat cheese |
Place tomatoes garlic onions peppers and lemon juice in blender. Purée until smooth. While blender is on medium slowly add EVOO. Turn blender to high for 1-2 minutes until soup is few,y. Chill. Serve in bowls w garnish
