Shrimp Scampi

1 pound jumbo | shrimp, butterflied |
½ cup | olive oil |
4 large cloves | garlic, minced |
1 tablespoon | fresh lemon juice |
2 | plum tomatoes, seeded and diced |
2 tablespoons | parsley, minced |
½ teaspoon | dried oregano, crumbled |
½ teaspoon | pepper |
½ teaspoon | salt |
Flatten shrimp slightly; place in bowl; add all remaining ingredients except salt. Marinate in refrigerator 2 hours, stirring shrimp once or twice.
Add salt to shrimp mixture; toss. Place shrimp on broiler pan. Place marinade in small saucepan; heat to boiling. Simmer 2 minutes or until hot. Broil shrimp 3 inches from heat source 2 minutes; turn and cook 1 minute or just until cooked through. Place on platter; pour hot marinade on top.
Makes 4 servings or more as an appetizer.
