| 2 | Leeks, white & green parts thinly sliced |
| 3 | Garlic cloves, minced |
| 2 Med | Zucchini, cut in half moons |
| 1 | Broccoli head, cut bite size |
| 4 | Basil leaves, chopped |
| 1 | Spinach head, chopped |
| 1 tsp | Salt |
| 1/2 tsp | Black Pepper |
| 6 C | Water |
| Basil, chopped for garnish |
In stock pot, sauté leeks & garlic over med high for 3 min.
Add zucchini, broccoli, basil, spinach, salt & pepper. Sauté 5 min.
Add water. Bring to boil.
Reduce heat & simmer 15 min.
Serve topped with Basil.
