Sweet Potato Casserole

5 lbs | sweet potatoes, peeled, chopped, boiled and drained |
1 1/4 cup | butter |
1 1/4 cup | brown sugar |
2 cup | mini marshmallows |
1/2 tsp | nutmeg |
1 tsp | cinnamon |
1 tsp | vanilla |
1 bag | marshmallows |
Directions:
1. Preheat oven to 400 degrees. Grease 9x13 dish
2. In a large saucepan over medium heat, combine butter, brown sugar, 2 cups marshmallows, cinnamon, nutmeg and vanilla and bring to a boil
3. Stir potatoes into marshmallow sauce, mash and break apart potatoes. Transfer to prepared dish
4. Bake in preheated oven for 15-20 minutes
5. Top with marshmallows and place back in the oven for a few minutes until marshmallows are browned
