Christmas Cookies

1 1/2 cup | butter |
2 cup | sugar |
4 | eggs |
1 tsp | vanilla |
5 cups | flour |
2 tsp | baking powder |
1 tsp | salt |
3 cup | confectioners' sugar |
6 tsp | milk |
6 tsp | light corn syrup |
1/4 tsp | clear vanilla or almond extract |
Assorted food coloring |
Directions:
1. Cream the butter and sugar. Beat in the eggs and add the vanilla. Add the flour, baking soda and salt and mix well. Refrigerate at least 2 hours
2. Preheat oven to 375 and line baking sheets with parchment paper.
3. Roll the dough out on a lightly floured surface and cut with a cookie cutter. Transfer to cookie sheets.
4. Bake for 10-15 min. Slide parchment off cookie sheets and allow to cool for a few minutes before removing from parchment paper. Cool completely before icing.
Icing:
1. In a small bowl, stir together confectioners' sugar and milk until smooth. Beat in corn syrup and almond extract until icing is smooth and glossy. If icing is too thick, add more corn syrup.
2. Divide into separate bowls, and add food colorings to each to desired intensity. Dip cookies, or paint them with a brush.
