Dijon roasted new potatoes

| 2 tbsp | Dijon mustard |
| 1 tsp | olive oil |
| 3/4 tsp | paprika |
| 1/2 tsp | salt |
| 1/4 tsp | dried thyme |
| 1/4 tsp | black pepper |
| 11/2 lbs | uncooked new potatoes cut in half |
| Preheat oven to 425 coat a 9x13 baking dish with cooking spray. In a large bowl whisk together mustard, oil, paprika, salt, thyme and pepper add potatoes and stir to coat. Transfer potatoes to a prepared baking dish and roast 15 minutes: stir and roast until tender on inside about 15 to 20 minutes more. If potatoes are not crisp enough spray with cooking spray and bake a few more minutes. | |
