    1.2  almond meal
    360  brandy
360 strong espresso
    36  yolks
    1200  sugar

36 whites
Melt the chocolate and the butter, add almond meal, brandy and espresso.
Whisk yolks with the sugar and add to chocolate mixture whisk whites and fold
bake at 140° over night
