Applesauce Breakfast Loaf

¼ cup | vegetable oil |
margarine, alternative | |
¼ cup | orange juice |
1 ½ cups | applesauce |
2 tsp. | baking soda |
1 cup | white sugar |
½ tsp. | salt |
1 ½ tsp. | cinnamon |
½ tsp. | nutmeg, (optional) |
2 cups | all-purpose flour |
Grease muffin tins. Preheat oven to 375 F. In a large bowl, mix oil, juice, and sugar together. In a small bowl, dissolve baking soda in applesauce. (The applesauce will fizz up a bit.) Stir applesauce into oil mixture. In a separate bowl, combine dry ingredients. Add applesauce mixture to dry ingredients, stirring just until moistened. Fold in raisins if desired. Fill muffin tins 2/3 full and bake on middle rack for 15-20 min. (Adjust baking time if using loaf or baking pan, will take longer to bake)
Makes 12 large or 18 smaller muffins, or 1 loaf.
