Asparagus, tomato & bacon

Ingredients - served 2 | |
1 Large bunch | asparagus |
3 large | tomatoes |
2 cloves | garlic |
Fresh Rosemary | |
basil | |
Large knob | butter |
Chop the garlic and tomatoes finely and throw in a pan with some oil. Put your bacon on in a separate pan and cook it till crispy then chop into small pieces.
When the garlic and tomatoes are cooked and soft throw in the herbs and butter.
Boil a pan of water 2cm deep and then steam the asparagus for 5 mins over it in a colander with foil over top.
Season the sauce with salt/pepper, then serve you asparagus with tomato sauce over top and sprinkled with chopped bacon. Grate a bit of Parmesan too if you have it...
Extra salt before eating brings out the asparagus taste nicely.
