½ cup | water |
1 10-ounce package | frozen chopped spinach |
3 cups | cooked rice |
1 cup (8-ounces) | crumbled feta cheese |
1 cup | Parmesan cheese, grated |
1 teaspoon | salt |
1 teaspoon | seasoned pepper |
¼ teaspoon | garlic powder |
5 | eggs, divided |
1/3 cup | bread crumbs |
Preheat oven to 350?F.
Grease a 13x9-inch baking pan. In small saucepan over high heat, bring water to a boil. Add spinach and cook just until thawed; drain and squeeze dry. In medium-sized bowl, combine spinach, rice, cheeses and seasonings. In small bowl, beat 3 eggs just enough to blend yolks; add to rice mixture and blend well. Coat prepared baking pan with _ cup crumbs; spoon rice mixture over crumbs. In small bowl, beat remaining 2 eggs until frothy; brush over rice mixture. Sprinkle with remaining crumbs. Bake for 30 minutes, or until firm. Let cool slightly; cut into diamond shapes (about 2½-x1¾-inch). Serve warm or at room temperature.
Makes 35 hors d'oeuvres.
