Pineapple Chicken Salad

3 | whole chicken breasts, boiled, skinned, and cut into chunks |
1 cup | celery, thinly sliced |
½ small | ripe pineapple, peeled and cut into chunks, |
lettuce, boston or iceberg, broken into small pieces | |
shredded coconut, toasted, (optional; I omit) | |
almonds, sliced, (optional) | |
¾ cup | mayonnaise |
¼ cup | pineapple juice |
2 tablespoons | lime juice, (I use lemon juice) |
1 tablespoon | honey |
1 tablespoon | sugar |
Toss together chicken, celery, pineapple. Whisk together mayonnaise, vegetable oil, pineapple juice, lime (lemon) juice, honey and sugar until well blended. Pour dressing over chicken mixture.
Line dish with lettuce, top with chicken salad and then sprinkle with coconut and/or almonds if desired.
