Pineapple Chicken Salad

    3  whole chicken breasts, boiled, skinned, and cut into chunks
    1 cup  celery, thinly sliced
    ½ small  ripe pineapple, peeled and cut into chunks,
      lettuce, boston or iceberg, broken into small pieces
      shredded coconut, toasted, (optional; I omit)
      almonds, sliced, (optional)
    ¾ cup  mayonnaise
    ¼ cup  pineapple juice
    2 tablespoons  lime juice, (I use lemon juice)
    1 tablespoon  honey
    1 tablespoon  sugar

Toss together chicken, celery, pineapple. Whisk together mayonnaise, vegetable oil, pineapple juice, lime (lemon) juice, honey and sugar until well blended. Pour dressing over chicken mixture.

Line dish with lettuce, top with chicken salad and then sprinkle with coconut and/or almonds if desired.
