Pumpkin Soup

600g | Potatoes, chopped coarsely |
200g | Onion, chopped coarsely |
1.5kg | Pumpkin, chopped coarsely |
1.5lt | Chicken Stock |
125ml | Cream |
40g | Butter |
1. Heat butter in a large saucepan, add the onion and stir until soft. Stir in the potatoes and pumpkin. Cook stirring for 5 min.
2. Add stock to the saucepan, bring to the boil and simmer uncovered until the pumpkin is soft.
3. Blend until smooth
4. Just before serving add the cream and stir over medium heat till hot.
