Snicker doodle muffins

1 cup | butter, softened |
1 cup | sugar |
2 | whole eggs |
2 teaspoons | vanilla |
2-1/4 cups | flour |
3/4 tsp | baking powder |
3/4 tsp | baking soda |
3/4 tsp | cream of tartar |
1/2 tsp | salt |
1 cup | sour cream |
1/4 cup | buttermilk |
For the topping | |
2/3 cups | sugar |
2 tbsp | cinnamon |
Preheat oven to 350
In a mixer, combine the butter, sugar, and cream until fluffy. Add in the eggs and vanilla.
In a separate bowl, combine the dry ingredients. Add half of the dry ingredients to the mixing bowl and stir to combine. Add the sour cream and buttermilk and mix to combine. Add the rest of the dry ingredients and mix until you have a smooth batter.
In a small bowl combine the sugar and the cinnamon for the topping.
Use a scooper to put a scoop of batter in the cinnamon sugar mixture. Gently roll the batter in the sugar and place it in the muffin liner.
Sprinkle the left over sugar on top of the muffins.
Bake for 15-18 min.
