Spinach Beef Macaroni Bake

2 cups | uncooked elbow macaroni |
1 1/2 lbs | ground beef |
1large | onion, (chopped) |
1 1/2 | carrots, (shredded) |
1 1/2 | celery ribs, (chopped) |
1 (28oz) can | Italian style diced tomatoes |
2 tsp | salt |
1/2 tsp | garlic powder |
1/2 tsp | pepper |
1/4 tsp | dried oregano |
1 pkg | frozen chopped spinach, (10 oz) thawed and squeezed dry |
1/2 cup | parmesan cheese |
Cook macaroni until just about done and drain. Meanwhile in a large kettle, cook beef, onions, carrots and celery over med. heat until meat is no longer pink, drain. Add the tomatoes, salt, garlic powder, pepper and oregano. Bring to a boil. Reduce heat, cover and simmer for 30 minutes or until vegetables are tender. Add macaroni and spinach to beef mixture. Pour into greased 3 qt. baking dish. Sprinkle with Parmesan cheese. Bake uncovered at 350 for 25-30 min or until heated.
