1 1/4 cups | dried cannellini beans, or two 13 ounce cans drained and rinsed |
3 tablespoons | olive oil |
2 | celery ribs, including leafs, copped |
3 ounces | prosciutto, or pancetta, chopped |
2 | garlic cloves, chopped |
2 small | dried chiles, finely chopped |
1 handful | fresh basil leave, torn |
1 tablespoon | tomato paste |
3 | tomatoes, peeled and seeded |
5 cups | chicken stock |
salt | |
black pepper | |
4 ounces | dried pasta, small piece |
olive oil | |
parmesan cheese |
Simmer the dried beans in plenty of unslated water for 2 hours or until soft
Heat the oil in a heavy pan and add the celery and prosciutto.. Cook over low heat for 5 minutes
