Parmesan Chicken

1 2½- to 3-pound chicken, cut up | |
1 | chicken |
½ cup | Parmesan cheese, grated |
¼ cup | whole wheat flour |
1 teaspoon | paprika |
½ teaspoon | salt |
dash | pepper |
1 | egg, slightly beaten |
2 tablespoons | milk |
Rinse chicken; pat dry. In a plastic bag combine cheese, flour, paprika, salt, and pepper. In a shallow dish, stir together egg and milk. Dip chicken in egg mixture. Place chicken, 2-3 pieces at a time, in a plastic bag. Close bag and shake to coat with cheese mixture. Place chicken, skin side up in a 13x9x2-inch baking pan.
Bake at 375?F for 45-55 minutes. Chicken may be skinned to reduce fat.
Serves 4-6.
