Papa's (Uncle Pete Palazolo) Marinara Sauce

¾ cup | oil |
1 tablespoon | garlic, crushed |
1 cup | onion, chopped |
1 cup | celery, chopped |
2 | anchovies |
¼ cup | parsley, chopped |
1 can (#10) | tomatoes |
1 tablespoon | black pepper |
¼ cup | chicken base |
1 tablespoon | oregano |
Sauté onion, celery, and garlic in oil. Then add anchovies which will melt in the sauce. Break up tomatoes so that there will be pieces of tomato in the sauce. Put in tomatoes. After sauce starts to boil, add parsley, pepper, chicken base, and oregano.
Cooking time is approximately 25 minutes.
[One version I have has salt, this one doesn't. The other version I have leaves out the parsley and chicken base, so I guess that you can be somewhat creative with this.]
