Tuna Pasta

Ingredients - serves 2 | |
1 tin | tuna |
1 tin | chopped tomatoes |
1 | lemon |
1 teaspoon | cinnamon |
1 | red chilli |
1 medium | red onion |
50g | Parmesan |
Put pasta on boil. Chop onion finely and fry in some olive oil in a high sided saucepan. Add the cinnamon and chopped chilli then add the tin of tomatoes.
Add zest of the lemon then squeeze in juice to the tomato sauce then add the tuna. Season to taste.
When pasta ready, drain and reserve a little of the cooking water. Then add to the tomato sauce with two handfuls of freshly grated Parmesan. Add back in some of the salty pasta cooking water to make the sauce shiny/silky. Serve!
