Mom's Zucchini

      zucchini
      tomatoes, (roughly 1 tomato per 2 small zucchinis)
      onion, (roughly ½ an onion per 2 small zucchinis)
      olive oil, (roughly 1 to 2 tablespoons)
      salt and pepper to taste
      Parmesan or Romano cheese, grated

Wash zucchini and peel. Peel rather sloppily, that is, leave some of the peel on. Cut zucchini in quarters and slice ¼- to _-inch thick. Chop tomatoes. [I peel my tomatoes]. In a large frying pan, put in zucchini, tomatoes, onion, and pour olive oil over it. Fry until tender. This takes between 5 to 10 minutes. Add salt and pepper to taste. Sprinkle grated cheese on top.
