zucchini | |
tomatoes, (roughly 1 tomato per 2 small zucchinis) | |
onion, (roughly ½ an onion per 2 small zucchinis) | |
olive oil, (roughly 1 to 2 tablespoons) | |
salt and pepper to taste | |
Parmesan or Romano cheese, grated |
Wash zucchini and peel. Peel rather sloppily, that is, leave some of the peel on. Cut zucchini in quarters and slice ¼- to _-inch thick. Chop tomatoes. [I peel my tomatoes]. In a large frying pan, put in zucchini, tomatoes, onion, and pour olive oil over it. Fry until tender. This takes between 5 to 10 minutes. Add salt and pepper to taste. Sprinkle grated cheese on top.
