Mom's Rice Balls

cheese, grated | |
salt | |
pepper | |

Make rice a little softer than usual. Add grated cheese, salt, pepper, butter, egg, and bread crumbs. Mix thoroughly. Form into balls and roll in bread crumbs. Fry until slightly brown.
It's a MOM recipe so quantities depend upon your ingenuity. This is a great break from the "just plain ol'" rice. From Pauline Viviano.
