Chocolate Mint Parfaits

2 cups and 1 Tbsp. | cold 2% milk, divided. |
1 pkg. (3.9 oz.) | instant chocolate pudding mix. |
4 oz. | cream cheese, softened |
1 Tbsp. | sugar |
1/4 tsp. | peppermint extract. |
1 cup | whipped topping |
•Mint Andes candies, optional.
•Mix pudding and 2 cups of milk, set aside.
•Beat cream cheese, sugar, extract, and remaining milk in a small bowl. Fold in whipped topping.
•Spoon half the pudding into 4 parfait glasses. Top with half of cream cheese mixture. Repeat layers.
•Garnish with candies if desired.
