Marinated Shrimp

1 slice | onion |
1 slice | lemon |
3 | whole peppercorns |
1 1/2 pounds | shrimp, shelled and deveined |
1 small | lemon, thinly sliced |
1 cup | thin red onion strips |
1/3 cup | black pitted olives, sliced |
Marinade |
1. Bring large saucepan of water to boiling. Add onion, lemon slice, peppercorns and shrimp. Return to boiling. Simmer 2 minutes. Drain, discarding onion, lemon and peppercorns. Cool shrimp.
2. Combine shrimp, slice lemon, red onion and olives in serving bowl. Pour Marinade over. Refrigerate at least four hours or overnight; stir occasionally.
Marinade: Combine 1/3 cup olive oil; 2 T. each red-wine vinegar and lemon juice; 1 t. each leaf basil, crumbled, and Dijon-style mustard; 1/2 t. salt; 1/4 t. pepper; and 1 clove finely chopped garlic in jar with tight-fitting lid. Shake well.
