Edamame, Cilantro and Avocado Dip

Ingredients: | |
1 1/2 cups | frozen shelled edamame, (green soybeans), thawed and cooked |
1 cup | white beans, drained and washed |
1/2 | avocado |
1/4 cup | chopped red onion |
1/ 4 cup | chopped fresh cilantro and, or fresh basil |
1/2 cup | rice vinegar, (add more table spoon for as needed) |
2 tablespoons | Vegetable oil |
1 clove | garlic |
salt to taste | |
cayenne pepper to taste |
Directions:
Place all ingredients in a food processor and process until smooth. Chill and serve with rice crackers or vegetables - voila
