Wheat Germ Stuffed Tomatoes - want to try

4 large | tomatoes |
1 | avocado, peeled and diced |
1/2 cup | untested wheat germ |
2/3 cup | celery, chopped |
2-1/2 Tbsp | onion, finely chopped |
2 Tbsp. | parsley, minced |
2 Tbsp. | lemon juice |
1/2 tsp. | salt |
1/4 tsp. | pepper |
1- Wash tomatoes. Cut off top 3/4 in, scoop out seeds and pulp.
2- Turn tomatoes upside down on rack to drain.
3- Mix other ingredients with the scooped out pulp, and spoon into the tomato shells.
4- Garnish with parsley.
