Bean Quesadillas

| 1 tbs | olive oil |
| 1 | yellow onion , diced |
| 1 | green pepper , diced |
| 2 cloves | garlic , minced |
| 1 can | black beans , rinsed and drained |
| 1 | canned tomatoes , drained well |
| 1/2 can | corn |
| 12 | flour tortillas |
| 1 cup | cheddar , shredded |
| 1/2 jar | salsa |
| 3 tbs | sour cream |
Saute onion and garlic in olive oil
mix in beans, peppers, tomatoe, and corn
Cook until heated
Spread 6 tortillas with mix and cheddar
Top with another tortilla
Cook in quesadilla maker
