Balsamic chicken. (Dan 's)

Balsamic chicken | |
6 | boneless, skinless chicken breast halves |
2 cloves | garlic, minced |
1/2 teaspoon | freshly ground black pepper |
1/2 teaspoon | salt |
2 tablespoon | extra virgin olive oil |
4-6 tablespoons | white wine,, (optional) |
1/4 c | balsamic vinegar |
Rinse chicken & pat dry. Combine 11/2 teaspoon rosemary, garlic,pepper & salt in small bowl & mix well. Place chicken in large bowl. Drizzle with oil & rub with spice mixture. Cover & refrigerate overnight. Preheat oven to 450 degrees . Spray heavy roasting pan or iron skillet with cooking spray. Place the chicken in the pan & bake for 10 minutes. Turn the chicken over. If the drippings begins to stick to the pan, stir 3-4 tablespoons water or wine to loosen drippings. Drizzle vinegar over chicken in pan.
