    3-4  zucchini, spiralized
    2-3  tomatoes, chopped
    1/4 head  cauliflower, finely chopped
    1/4 c  nutritional yeast
    1 tsp  salt
    1 tbsp  Italian seasoning
    2 tbsp  balsamic vinegar

Add zucchini & tomato to medium bowl.
Add remaining ingredients to a small bowl & mix to combine.
Bowl small bowl into medium bowl.
Gently toss to combine.
Eat at room temperature or refrigerate.
Zucchini softens if able to rest 15-30 mon before eating.
Best if eaten within a day of making.
