Basic dough for pies | |
2 pounds | flour |
2 tablespoons | butter or shortening |
1 envelope | dry yeast |
1 tablespoon | salt |
2 cups | luke warm water, (approximately) |
½ teaspoon | sugar |
Cheese stuffing | |
2 cups | Feta cheese, crumbled |
1 cup | parsley, finely chopped |
1 | onion, finely chopped |
salt to taste | |
pepper to taste | |
Meat stuffing | |
2 pounds | lamb meat, coarsely ground |
1 large | onion, finely chopped |
½ cup | pine nuts, lightly browned |
1 teaspoon | salt |
½ teaspoon | pepper |
½ teaspoon | allspice |
¼ cup | lemon juice or vinegar |
¼ cup | butter or margarine |
Spinach stuffing | |
2 pounds | spinach |
2 large | onions, chopped |
2 | lemons, juiced |
¾ cup | oil |
½ teaspoon | sumac |
salt to taste | |
pepper to taste |
Basic dough for pies: Dissolve yeast in ¼ cup of warm water. Sprinkle with sugar. Cover and let rise.
In a large pan mix flour and salt. Add the yeast mixture and butter or shortening.
Gradually add the lukewarm water, mixing and kneading until dough is smooth and tender.
Cover with a blanket and put in a warm place for 2 hours or until dough rises.
Cut dough into pieces 2-inches to 2½-inches in diameter. Form into balls by tucking the dough underneath the balls to make them round and smooth. Let rest for 30 minutes between blankets.
Dough is now ready to be used with various fillings.
Cheese stuffing: Mix all ingredients together. Use to stuff dough.
Meat stuffing: Sauté onions in butter until tender. Add meat and spices. Sauté until tender. Add browned pine nuts and lemon or vinegar. When cool, use for stuffing.
Spinach stuffing: Wash spinach. Chop. Sprinkle with salt. Let stand for 15 minutes, then squeeze out the excess moisture. Mix with all the ingredients and set aside.
To assemble pies: Pinch off 2½-inch balls of dough and roll out to 4-inch circles.
Put a heaping tablespoon of cheese stuffing, meat stuffing, or spinach stuffing on each circle.
Fold up from the bottom to the middle and bring in sides to center to form triangle. Press down seams firmly and pinch ends together.
Grease pan. Place pies on pan and brush tops with olive oil.
Bake in a preheated 400?F oven until pies are golden brown.
