Cookie filling
    4 pounds  raisins
    20 ounces  dates, chopped
    10  Black Mission figs, chopped
    2 large  Hershey bars, (or 1 Cadbury and 1 Hershey), coarsely chopped
    ¼ cup  citron, finely chopped
    1 teaspoon  cloves
    ½  lemon, rind grated
    ½  orange, rind grated
    1 teaspoon  crushed cinnamon bark
    3 tablespoons  cinnamon
    2/3 pound  honey
    1 cup  sugar
    ½ cup  warm water
    ½ cup  cold water
    2 cups  walnuts, coarsely chopped and toasted
    1 cup  almonds, coarsely chopped
      Cookie dough
    3 ½ pounds  Pillsbury flour
    3 to 3 ½ cups  Crisco
    1 ½ cups  sugar
    1 ½ cups  warm water

Cookie filling: Soak raisins in warm water for ½ hour, drain. Mix in a large bowl the raisins, dates, figs, chocolate, citron, cloves, lemon rind, orange rind, cinnamon bark, and cinnamon. Add honey. Dissolve sugar in warm water and old water. Add to mixture. Mix well and refrigerate covered for 3 days or more. Mix occasionally. On the day of baking add walnuts and almonds to cookie filling. Mix well.

Cookie dough (make the day before baking): Cut Crisco into flour. Dissolve sugar in warm water. Add sugared water to flour; toss like pie pastry until nicely moistened. Form into ovals large enough for a 10-inch pie pan. Wrap individually in plastic wrap. Place in pan (like a lasagna pan) and over with a damp dish towel. Chill overnight.

To assemble: Remove a couple ovals of dough at a time. Roll out very thin with rolling pin. Cut rounds with 4-ingh diameter cookie cutter. Place heaping tablespoon of filling in center. Roll up, tucking ends under. Place seam side down on ungreased cookie sheet. Bake 12-15 minutes at 400 degrees F until very lightly browned. Cool on racks. While still slightly warm roll in confectioners’ sugar. Let sit overnight. Wrap singly in squares of wax paper. Store airtight.

Makes 150 cookies.
