Shrimp Casserole

1/2 (8 oz pkg) wild rice | |
1 lb | shrimp, medium sized and deveined |
1/2 | green bell pepper, chopped |
1/2 | onion, chopped |
1 (10 3/4 oz) | condensed cream of mushroom |
2 cups | grated sharp cheddar |
salt and pepper at leisure for seasoning after mixed together | |
butter, (about 3 tbsp) |
use a 9 in squared aluminum pan or a 11 by 7 casserole dish
Preparation
1. cook rice as directed, drain and cool
2. bring 2 cups of waters, 1/2 tbsp salt to boil ina medium saucepan, and cook shrimp for 1 minute. Drain and immediately set aside
3. heat butter, saute onions and bell peppers until soft
4. In a large bowl, combine rice, 1 1/2 cup cheese, shrimp and veggies-- add salt and peper if ya want
5. mix well
6. spray pan and top mixture in pan with the remaining 1/2 cup cheese
7. preheat oven to 325 and cook for 30 min or until bubbly!!
