Tortilla Soup

Ingredients: | |
4TBS | butter |
2 med. | onions, ( chopped fine) ( I only use one onion) |
2tsp. | garlic powder |
6c. | chicken stock, (I use Swansons) |
2- 28 oz. | canned diced tomatoes |
1 14oz can | light red kidney beans |
3 sm cans | green chilies, ( I only use one---these are not jalapenos) |
4 c. | cooked chicken tenders, (after they cool I pull them apart into small pieces) |
2TBS | cumin |
4 to 5 TBS | chicken base, ( I have Orrington Farms soup base and food seasoning---you find it where you would find soup) |
1 bag | frozen corn |
1. Heat butter, onion and garlic in a stock pot until soft.
2. Add all remaining ingredients except the corn.
3. Add corn when soup begins to boil. Simmer soup for agbout 30 min.
Serve with tortilla chips, mexican cheese, and a dab of sour cream.
