2 | whole chicken breasts, boneless |
8 slices | swiss cheese |
olive oil | |
bread crumbs, Italian | |
1 stick | butter, melted |
1 cup | dry white wine |
Preheat oven 350?F.
Cut chicken breasts in half (to make four breasts) and pound out. Cut each breast in half again. Place a slice of swiss cheese on top of chicken breast, roll up and secure with a toothpick. Dip rolled chicken in olive oil, and then cover with Italian bread crumbs. Place chicken in a 9x13-inch pan. Mix one stick of melted butter with wine and pour over chicken roll ups (reserve some for basting).
Bake in 350?F oven for 1 hour, basting every 15 minutes.
