Chocolate Peppermint Cookies

2 c | flour |
3/4 c | cocoa powder |
1 tsp | baking soda |
1/4 tsp | salt |
1 c (2sticks) | butter, room temperature |
1 C | packed light brown sugar |
2 | eggs |
2 tsp | vanilla |
2 c | chocolate chips |
Glaze: | |
3/4 c | powdered sugar |
2 drops | mint extract, (not peppermint) |
2 bags | peppermints, crushed |
**sometimes I add a little cream cheese to glaze
Pre heat to 350'
In medium bowl, sift flour, cocoa, baking soda, and salt.
In mixer, beat butter and sugars until fluffy. Add eggs one at a time. Add vanilla. On "stir" slowly add flour. Stir in chocolate chips.
Drop teaspoon size cookies on ungreased cookie sheet and bake for 8-10 minutes or until cracked on top.
Let cool completely before drizzling glaze and sprinkling peppermints.
