Peanut Soup

6 | Chicken pieces |
2 large | finely chopped onions |
400g tin | tomatoes, blended |
1 jar | smooth peanut butter |
Optional vegetables could include carrots and mushrooms
Place chicken pieces in a little water and add the salt to taste.
Add onions and tomatoes.
Simmer 10 minutes then add the peanut butter.
Increase water level near to the top of the cooking pot and leave to simmer uncovered for 1 hour.
Add carrots and mushrooms if required for the last 20 minutes.
Remember that if you’re using processed chicken it will disintegrate quickly in the soup, so once cooked you should remove it from the pot until the soup has thickened and it has absorbed the rich flavours of the peanut butter.
