Boreks—Turkish pastries

6 ounces | feta cheese, (drained weight) |
2 tablespoons | finely chopped fresh chives or dill |
2 tablespoons | finely chopped fresh parsley |
½ teaspoon | black pepper |
6 tablespoons | unsalted butter |
8 sheets | phyllo pastry |
Crumble the feta, then mix with the herbs and pepper. Preheat the oven to 350 degrees. Melt the butter and skim off any foam.
Cut the phyllo pastry into 3 inch strips. Take one strip and cover the rest with a damp dish towel.
Brush the strip with melted butter and place a teaspoon of feta mixture on the bottom right-hand corner, as showm on page 151, and fold.
Lay the pastries on a baking sheet and brush with more butter.
Bake for 20 minutes, until golden.
