Belgian Waffles

    4  eggs, separated
    ½ teaspoon  vanilla
    3 tablespoons  butter or margarine, melted
    1 cup  flour
    ½ teaspoon  salt
    1 cup  milk

Beat egg yolks until very light. Add vanilla and butter. Combine flour and salt; add with milk to egg mixture. Beat well. Beat egg whites until stiff and fold into batter.

Bake in a Belgium waffle iron. It will tell you how long. If you use an electric waffle iron, follow directions. If you use a manual waffle iron (they have those?) then you have to flip the iron over on the stove; read the directions.

Serve with fresh fruit.

NOTE: Make certain you grease the griddle before making the first waffle. CAUTION: Use original Crisco to grease. Butter-flavored Crisco will cause your waffles to stick. You wouldn't like the mess.
