Apple cheddar canapés

APPLE CHEDDAR CANAPES | |
7-9 slices | rye bread |
1 lg. | Granny Smith apple, peeled, cored & coarsely grated |
1 c. | coarsely grated extra sharp cheddar cheese |
3 tbsp. | mayonnaise |
1 tbsp. | honey |
1 tsp. | Dijon mustard |
1/4 tsp. | caraway seeds |
Freshly ground pepper to taste |
Cut out 3 or 4 rounds from each slice of bread using a 2" round cutter. On a baking sheet toast the rounds under a preheated broiler, turning once until golden. In a bowl, combine the apple, cheddar cheese, mayonnaise, honey, mustard, caraway seeds and pepper. Spread each toast with a scant teaspoon and broil for approximately 2 minutes. Makes approximately 28 pieces, serving 6 to 8 people.
