Beet Soup

3 large | potatoes, diced |
3 | beets, washed, peeled, and diced |
salt to taste | |
1 quart | milk |
½ pound | butter |
½ pint | sour cream |
3 teaspoons | flour |
vinegar | |
sugar |
Boil potatoes until tender. Save potato water. Boil beets until tender. Combine beets with potatoes and potato water. Add salt, milk, and butter. Add a bit of water to the flour to thin it, then mix it with the sour cream. Pour some of the hot soup a little at a time into the sour cream mixture to mix well. The add it into the rest of the soup. Bring to t a boil. Add vinegar and sugar to taste.
