Bean Burgers

¼ cup | green onions, minced |
2 teaspoons | garlic, minced |
1 tablespoon | white wine or vegetable stock |
1 15-ounce can | cooked pinto beans, drained |
3/8 cup | cracker meal |
1 | egg white |
¼ cup | fresh parsley, chopped 1 tablespoon rice vinegar |
¼ teaspoon | Italian seasoning |
Braise the onions and garlic in the white wine (or vegetable stock) until soft.
Combine the sautéed onions and garlic, beans, cracker meal, egg white, parsley, vinegar, and seasoning. Mash until blended, but not entirely smooth.
Bake in a preheated 350 degree F oven for 25 minutes. Burgers should be lightly browned. Serve hot.
