|2 tablespoon||melted butter|
|2 cup||sifted all-purpose flour|
Have ready 8 pudding cups or 18 popover tins, buttered and dusted with flour or sugar. Have all the ingredients at room temperature. Preheat the oven to 220ºC (450ºF).
Beat until smooth the milk, butter, flour and salt. Add the eggs, one at a time. Do not overbeat. The batter should not be heavier than whipping cream. Fill the baking cups three-fourths full. Bake at once. After 15 minutes, lower the heat to 175ºC (350ºF) (without peeping!) and bake another 20 minutes. The popovers are done when the side walls are firm.
