Baked Potatoes with Vegetables

Baked Potatoes with Vegetables Categories: vegetable|potatoe|

    6 medium  to large Yukon Gold potatoes, unpeeled and sliced 1/4" thick
    4  celery ribs, chopped in 1/2" pieces
    1 large  white onion, sliced and cut into 1" pieces
    2  sweet peppers,,, (any color), seeded and chopped into 1" pieces
    2 cans  sliced Italian stewed tomatoes, drained
    2 t  finely crushed oregano
salt and pepper

In a 3 qt dish which has been sprayed with a no stick cooking spray, arrange potatoes in overlapping fashion. Salt and pepper to taste.

Layer vegetables in order listed above, topping with tomatoes.

Sprinkle oregano over all.

Cover and bake at 400 degrees for 1 hour or till potatoes are desired doneness.
