Aunt Lee Palazzolo’s Rice Stuffing

2 pounds | ground chuck |
1 pound | ground pork |
1 pound | onions, chopped |
¼ cup | olive oil |
1 teaspoon | salt |
½ teaspoon | pepper |
1 pound | rice |
1 ½ cups | Parmesan cheese, grated |
Saute onions slowly until soft and transparent. Add both meats and blen with onions until meat is no longer red. Cook the rice in two quarts of water for 18 minutes. Drain the rice; save about 2 cups of the liquid. As you blend meat with rice, add the cheese gradually. Adjust taste with salt and pepper and add some of the liquid fom the rice. This should be a little juicy.
This is similar to mom’s rice stuffing-from Aunt Lee’s family cookbook, “Cookin’ wit the Palazzolo’s.”
