Au Gratin Potatoes

6 medium | potatoes, boiled, peeled, and sliced 1/8-inch thick |
1 small jar | pimento, drained and chopped |
3 tablespoons | butter |
½ cup | onion, chopped |
3 tablespoons | flour |
dash | pepper |
2 cups | milk or light cream |
8-ounces | Cheddar cheese, grated |
parsley flakes |
Chill potatoes. Mix with pimento and set aside. Melt butter. Sauté onions until tender. Stir in flour and pepper. Over medium heat, add milk and stir until smooth. Stir in cheese. Pour over potato mixture, coating evenly. Turn into a buttered 1 ½-quart casserole dish.
Bake covered at 350 degrees F for 45-55 minutes. Uncover for last 15 minutes to brown top. Garnish with parsley flakes.
Serve 6.
