Au Gratin Potatoes

    6 medium  potatoes, boiled, peeled, and sliced 1/8-inch thick
    1 small jar  pimento, drained and chopped
    3 tablespoons  butter
    ½ cup  onion, chopped
    3 tablespoons  flour
    dash  pepper
    2 cups  milk or light cream
    8-ounces  Cheddar cheese, grated
      parsley flakes

Chill potatoes. Mix with pimento and set aside. Melt butter. Sauté onions until tender. Stir in flour and pepper. Over medium heat, add milk and stir until smooth. Stir in cheese. Pour over potato mixture, coating evenly. Turn into a buttered 1 ½-quart casserole dish.

Bake covered at 350 degrees F for 45-55 minutes. Uncover for last 15 minutes to brown top. Garnish with parsley flakes.

Serve 6.
