Basic Vinaigrette and Variations

Basic Vinaigrette | |
1/4 cup | red wine vinegar |
1 Tbsp. | Dijon mustard |
1/4 tsp. | Salt or to taste |
1/8 tsp | pepper or to taste |
3/4 cup | olive oil, vegetable oil or combination |
In a small bowl whisk together the vinegar, mustard, salt and pepper. Whisking constantly, add the oil in a slow, steady stream until completely combined.
Variations
1) Substitute 1/3 cup fresh lemon juice for the vinegar and a cup of chopped fresh chives.
2) Add 3Tbsp. Chopped fresh herbs, such as parsley, tarragon, dill, or thyme.
3) Add a small clove of garlicm, minced, and a half cup of packed fresh basil leaves. put all ingredients in a processor or blender and blend until smooth.
