Heat in double boiler or in a saucepan over very low heat
    1 small  cab evaporated milk, (1 cup)
Add
    1/2 cup  mild or sharp cheese cut in small pieces
Stir until sauce is smooth. Season to taste with
      Salt
      paprika
      dry mustard
      curry

If sauce us too thick add a little milk
